Punjab Grill Menu Gets Better With Rangla Punjab Food Festival

Just recently concluded Rangla Punjab is an experience created by the Punjab Grill group. This includes visiting the real, authentic and rustic Punjabi cuisine in the Punjab heartland. Some of us followed this journey through their social media presence too. In an effort to bring the same Rangla Punjab theme to the Punjab Grill Menu, we have their new food festival.

The Rangla Punjab festival has the off-beat and true recipes on the Punjab Grill menu. One look and you know that these dishes are unheard of in the normal North-Indian restaurants around. The festival is loaded with 15 such items thought out and mastered to be served out here now in Hyderabad.

Kale Gajar Ki Kanji

Nothing kicks off a Punjabi meal like Kali Gajar Ki Kanji. The color is a deep pinkish-red and the drink has some really strong flavours. Mustard being the main ingredient gives the zing to this drink. Once you adjust to this the refreshing drink gets really addictive.

Makhan Wali Lassi

Lassi has always been a critical part of the Punjab Grill menu. Here it comes as Makhan Wali Lassi. But I missed the makhan on the top and even the thickness of a rich lassi wasn’t there. So I knew I would be sticking to my Kanji for the evening.

Moving from the usual Punjabi starters the ones here are all the new ones.

Mutton Tawa Tikke comes from the bylanes of Amritsar. Mutton is cooked twice for this, once in normal curry style and then roasted in ghee with some tomato and spices. The juicy mutton and the spices make for a very different mutton starter. A little spicy though but works because of the flavours.

Chargha Murgh

Chargha Murgh is a roast recipe that comes from Lahore. A full chicken is first marinated in the spices, cooked a little in a vessel and then completed by frying. Using 2 cooking techniques gives it a very distinct flavour. The topping of masala and chat powder goes well with it.

Tikki Choley

On the vegetarian front comes the Tikki Choley. The choley in here is actually black chana curry followed by some curd, chutney and grated potato. But the main tikki missed the crunch and the loaded ghee fry taste that you want from a tikki.

The main course was even more inviting given the mix of dishes on the Punjab Grill Menu for the Rangla Punjab Festival.

Atta Chicken

The main attraction here is the Atta Chicken. One whole chicken, about 500gms, is covered in all dry masalas and then covered with dough. Put as whole in the tandoor the cooking happens inside the dome. Since there is no direct cooking involved, the chicken carries the rustic masala flavours. Only the chicken gives an almost raw masala jolt, but paired with a naan, the dish falls into place.

Keema Karela

Keema Karela sounded so intriguing. This was with karela stuffed with keema and then grilled. This gives the karela a nice charred exterior and the keema loaded on this soaks in the bitterness of the karela. This would easily be the most innovative combo of the night.

Makhani Chooze 1965

No Punjabi meal is complete without butter chicken. But since this is more about hidden recipes, we had the Makhani Chooze ‘1965’. Similar consistency, but no cream added here and the chicken is used with the bones. But still very rich and soothing.

Wadi Pulao

I was glad they dint serve a biryani here. The rice section holds the  Wadi Pulao like how it would be done in Punjab. Wadi alone is super delicious and once cooked, it goes well in curries and rice too. The pulao was mildly flavoured but the wadi was a tad bit over-fried and gave off a burnt flavour.

After the richness of the meal, a perfect ending dessert was needed to sum up this Punjab Grill Menu for Rangla Punjab Festival

Gurh Ka Halwa

Gurh Ka Halwa provided just that. Again, something new and yet so homely. A little warm and just gooey awesomeness. Would have been amazing with some ice-cream, but then that would just kill the rustic feel.

Paan Shot

To top it all comes the amazing Paan Shot. This is just so so refreshing, I wish all places make this compulsory!

Rangla Punjab Festival does bring out some new dishes that we wouldn’t ever see in commercial restaurants. It’s interesting to see that there are so many food things still confined only to the hinterlands. This does seem like a good chance of savouring these items and getting to know how different it can be.

The festival is on till the end of March and you can order whichever dish sounds more interesting. My picks would be Chargha Murgh, Keema Karela and the Kanji.
